BLUE BATAK - INDONESIA

Botanic varieties : Typica (from Jember on Java island and
Onanganjang from Toba Lake, North Sumatra), and Catimor
Region of production : Blue Batak is an arabica coffee from
Lintongnihuta, North Sumatra. It grows at an altitude of 1300-1400m
on the South-West of Lake Toba which is the largest volcanic crater
lake in the world.
Producers : For decades, this coffee has been grown by the indigeneous
Batak tribe. Thus to honour them, the coffee was called Blue Batak.
Harvest : From October to March
Preparation : The Blue Batak is produced through a dry-processing
but using the so-called wet-hulled method, a process unique to parts
of Indonesia. In this process, the coffee parchment is only marginally
dried and then stripped from the bean. After drying, the coffee bean
turns a slightly bluish jade (hence the term ‘blue’).

The Republic of Indonesia is the biggest archipelago in the world with more than
17,000 islands. Coffee was imported by the Dutch people in the 18th century, to
nearly all the islands.
It is now the world’s 4th largest producer of coffee and the 3rd largest on the robusta
market, after Vietnam and Brazil. Although Arabica represents a small percentage of
Indonesian production they are considered some of the best in the world.
The 2012/2013 crop (arabica and robusta) is estimated to 11,7 millions of bags.
There are four main regions of production : Sumatra, Bali, Sulawesi et Java.
